My wife has a 2019 Alltrack SE (Tornado Red, 6MT) with the stock 17" wheels. OE tires are shot and I was thinking of upgrading the wheels as it's easier to find better tires in the 18" size.
Stock tires are 205/55-17 and the +1 size is 225/45-18.

I know the stock wheels are Valley, 7Jx17 ET42 5x112 5GM601025AA8Z8.
I know the 18" upgrade wheel is the Canyon which is 7.5Jx18 ET47 5x112 5G0-601-025-BM-ZD8

So what other OE wheels are a direct bolt on and look good? Does any GTI/GLI wheel work fine (like the Charleston or the Austin), or is the offset different?

I have the stock 18's (dap package rims?) and with 1/2" (13mm, mostly called 12mm) spacers, I'll get a little rub at full suspension articulation. I do have factory mudflaps, suspect those, but it's really minor so haven't crawled under there.

I also get it with 235's on peeler 18x8's with blizzacks. They are hartmann rims with an aggressive audi offset, IIRC either 32 or 35.

When looking at rims, keep in mind the bolt pattern and center bore first, the width and tire size usually used next. Offset is very important. A high offset can usually be corrected by spacers if needed.

Most stock VW OEM rims will fit fine from another golf.
